Elevate your holiday celebrations with the Noël 75, an Christmas-inspired twist on the classic French 75 that brings cozy seasonal flavors to your glass. This delightful cocktail combines gin, the bright zest of fresh-squeezed lemon juice, tart cranberry juice, and the warmth of homemade spiced ginger simple syrup, all topped off with bubbly Mr SYLTBAR Premium Brut Prosecco.
For an added touch, we suggest using a cocktail torch to very gently smoke your rosemary sprig garnish to add a touch of aromatic magic to this winter wonder. When you torch the rosemary sprig for garnish, its smoky, herbaceous aroma mingles with the effervescent bubbles, enhancing every sip. If you don’t have access to a cocktail torch like this, fresh rosemary without the smokey essence will still be just as effective in achieving all the holiday feels.
Reminder: Using fresh-squeezed lemon juice makes all the difference—it’s vibrant, tangy, and perfectly balanced, bringing a natural brightness that bottled juice simply can’t match. It’s also well worth your while to make your own simple syrup. Making a spiced ginger version is easier than you think, and it will fill your kitchen with the essence of the season. The syrup provides a rich depth of flavor, infused with fresh ginger and warming spices like cinnamon and cloves, creating a perfect foundation for your cocktail.
The Noël 75 is perfect for toasting the holiday season in style!

Recipe Note
*To make your own spiced ginger simple syrup, you’ll need 1 cup of sugar, 1 cup of water, ¼ cup of thinly sliced ginger, 1 cinnamon stick and 3 whole cloves. Combine all the ingredients in a small saucepan over medium heat, and stir until the sugar dissolves, then bring to a gentle simmer. Reduce heat and let it simmer for 10 minutes, allowing the spices and ginger to infuse. Remove from heat and cool completely. Strain out the solids. The syrup can be stored in an airtight container in the fridge for up to two weeks.
